Did I see they are using an induction cooktop mounted under a granite countertop? That's ridiculous. The heat transfer from the pot to the countertop has to be significant. Take a pot of boiling water and sit it on a granite counter and remove it a few minutes later. Is the countertop hot, I bet it is. How did they regulate the heat?

Most induction cooktops must sense a ferrous cooking pot/pan very close to the surface or it will shut off automatically. The magnetic field drops dramatically with distance.
